I would really like to use my ipod clickwheel as a volume control for my computer, is there any way to make this happen with rockbox? It's an ipod video

Not sure specifically about an ipod video, but Rockbox has HID support.
I've used it on a Sansa Fuze and it is documented in the documentation for it:

8.5.7 USB HID
This option turns the USB HID feature On and Off. When this feature is enabled, the player enumerates as a Human Interface Device (HID), composed of several HID sub devices. Since the player also enumerates as a Mass Storage Device, it becomes a USB Composite Device, which contains both these devices.

This mode lets you control the volume, playback, and skips tracks on the host computer. It is equivalent for the multimedia keys found on top of some multimedia keyboards.

smash it with a hammer, then buy an ipod video and install rockbox on it. When you do, open a new thread.
