I used to use a Fiio X1 player. This one had a playback mode that would make the player stop the playback once it finished the selected track. After idling for a while it would shut down, which was a separate feature. Implementing this should be fairly simple but quite useful if you're listening to a podcast or something.

I think you can already do this by inserting into a new playlist.

Doesn't this do what you want?
Settings -> Playback Settings -> Repeat -> Off

That's needlessly obtuse however.

I'm not referring to just turning off repeat, I'm referring to having the player play a single track and then stopping.

Long press to enter the context menu >> Current Playlist >> Clear List & Play Next
This method seems quite clear to me. Pros/cons of a playback method? The current method achieves the "play once" outcome without any persistent changes to settings, which I think is cleaner.

Alas, no "Clear playlist" option seems to exist.

The terminology has changed slightly since the post above yours (see the current version of the manual (https://download.rockbox.org/daily/manual/rockbox-ipodvideo/rockbox-buildch4.html#x7-730004.4.3)). What used to be called "Clear List & Play Next" for a while (and "Play Next" in 3.15) is just called "Play" now.
So, to replace all entries in the dynamic playlist with the selected track(s) choose:
Latest Dev Build: Playing Next... -> Play
or, in case you're still using, v. 3.15: Playlist -> Play Next
from the context menu

Playback Settings -> Single Mode.
Setting it to Track will pause playback once selected track is finished
