MPEG encoding help

I need help encoding other video file formats to mpeg for ipod nano.
Elephants Dream works fine, but everytime I try to convert other formats to mpeg, it dosn't work on my ipod! Iv'e already istalled VLC, but I have no idea what vlc --sout=#transcode{vcodec=mp2v,vb=600,width=,height=,acodec=mp3,ab=128,samplerate=44100,audio-sync}:std{access=file,mux=ps,url=.mpg (from http://www.rockbox.org/twiki/bin/view/Main/PluginMpegplayer) means! Someone help me!
