Are you by chance using Linux?The act of copying a song from my computer to my iPod very occasionally corrupts the mp3. It's compatability problem between however Apple implements FAT32 and Linux. There's not much you can do but get a good copy of the song and try again. I lost a couple songs because I didn't know they were corrupted and I copied them back, overwriting the original (Like a dumbass).

Are you sure you're cleaning disconnecting (i.e. unmounting and/or ejecting the device), and that your filesystem doesn't contain any errors?
