I just found out about Rockbox

It looks pretty questions, though.   If I install it onto my iPod, can I get it back off (to its original state)?  How does it work?

That's why we included a Table of Contents.

I mean, the Manual *is* the answer to the question "How does it work?"  If you'd like a more specific answer, perhaps you could ask a more specific question.

I'm going to assume you're asking if you can get out of rockbox back into the software that came with the iPod. The answer is yes. Restart the iPod and turn on the hold switch

J2383, that is not correct.  On the iPods, to get into original firmware you hold down Menu while it's booting up.

Actually it is correct. But so are you. Both methods work.

The old bootloader used the menu method, the new one uses the hold method.

You get into Original Firmware by putting the hold switch into the on (red) position as soon as the screen flickers to life in a power-on or reboot situation.
You reset/clear settins by putting the hold switch into the on (red) position as soon as the bootloader says "loading rockbox".
