If I was to install Rockbox on my 5th gen 60gb, would the option of the retail firmware still be available without installing iPod Linux? Or if not, is there any way of playing videos on Rockbox currently?

This is documented in many other posts in this forum, and very probably in the manual too.
Yes, you can dual boot.
Yes you can play videos in rockbox (with more limitations that in the OF however).

I appreciate it is probably on other posts but it isn't in the manual that I could see.
Does it support mp4 movie playing then?

I've added a patch to Flyspray to help ensure this information makes it into the manual. Thanks for pointing out it's not there. A lot of people criticise the manual - but few actually point out what's wrong with it
