Flick the "hold" switch on and then off again.  Then hold select+menu.  This will reboot into the Apple firmware.

If the Apple firmware isn't working for some reason, repeat the above, but when the Apple logo comes up, hold select+play.  This will take you to the emergency disk mode.

Note that you may have to hold these buttons down for more than a minute to see the effect, though it's typically a couple of seconds.
