How do you do screendumps?

The debug menu isn't described in the manual (intentionally) except saying the average user should keep out. So the screendump option is not documented in the manual.
Another option would be to use the simulator ... rasher has prebuild binaries for windows. Look for the UiSimulator wiki page.

I am not really sure why screendump is 'hidden' in the Debug menu, wouldn't it be good to move that option to somewhere more accessible, and then it could be documented for anyone to use...

Well, originally there wasn't expected to be any non-debug use for screendump.

The screendump option is hidden because it disables usb (as it uses a usb connection to detect the screenshot "event"). That way it would be prone to errors and lots of users coming up, "my usb isn't working". So it's better to have this inside of the debug menu, people who use it will (hopefully) know what they are doing.
