Ok... I just couldn't resist, I voted for Rockbox! :P

Now to your questions:
1. Read and follow the installation instructions hosted in this site. It's not hard, really...
2. Yes you can have both iPL and Rockbox installed on your iPod
3. You don't need iTunes at all with Rockbox so it doesn't matter which version of iTunes you have

From the wiki pages:

http://www.rockbox.org/twiki/bin/view/Main/IpodInstallationBeta

or alternatively from the manual:

http://download.rockbox.org/manual/rockbox-ipodvideo/rockbox-buildch2.html#x4-60002

P.S. The left side menu in the frontpage is your friend. It won't bite if you click on it! :p

Seriously, if you can't figure out where to get instructions while EVERY page you've been to on our site with the exception of the patch tracker has that navigation bar, perhaps you shouldn't be replacing the firmware on your iPod.

While the install procedure has been somewhat simplified, there are a lot of peculiarities of the software that will require reading of the manual, and as a general rule we prefer not to have people constantly asking questions that are answered in it.

I locked your poll because it had nothing to do with the subject of your thread (though I have to admit, I was tempted to change the poll options to something consistent with the thread title).

In the future, please use a thread title that describes the contents of the thread, as required by our posting guidelines.

Several things. The first of which is I suggest you read this:
http://catb.org/~esr/faqs/smart-questions.html

I'm not sending you there because I'm mean or anything. I'm sending you to that article because I don't want some of the *ahem* "less understanding" users out there to make you feel like an idiot.

Rockbox can run alongside iPod Linux, however, iPod Linux doesn't work with the iPod video just yet. Believe me, I tried to set up my iPod to boot Rockbox AND iPod Linux and it simply doesn't have support yet. They are working on it though, so if you keep an eye on the ipodlinux website eventually they will add support

As for your questions.

but what do i need to do to get rockbox ON my 60gb ipod video?
You need all of these things:

http://download.rockbox.org/bootloader/ipod/ipodpatcher-win32/ipodpatcher.exe
http://download.rockbox.org/bootloader/ipod/bootloader-ipodvideo.ipod
http://download.rockbox.org/daily/ipodvideo/rockbox-ipodvideo-20061231.zip

Then you need to read through this and follow its instructions
http://www.rockbox.org/twiki/bin/view/Main/IpodInstallationBeta

can i run it alongside ipod linux (if i get it)?

Yes. Just as soon as iPod Linux supports the iPod Video.

can i use it if i have itunes 7?

Yes. I have iTunes 7 and haven't had any problems as of yet.
