On Rockbox, what does the Emulator Rockboy install other than rockboy.rock?  Is that the only file that Rockboy requires to run?

Yes... and it should be in "/.rockbox/viewers"

Of course you also need a .gb or .gbc rom file...  ;)

Yeah, ah I worded that a bit wrong.  If I was to put another Emulator on Rockbox, how would I do it?  Like.. which file from, say an N64 Emulator would you put in /.rockbox/viewers to be able to Emulate N64 roms?  I know it won't run that well, I'm just wondering which file it would be, thanks.

You wouldn't.

You would get the source code to an open source N64 emulator, convert as necessary to fixed point math, convert as necessary to C if it is written in C++, and then modify as necessary to fit the Rockbox plugin API. Then you would compile Rockbox with the emulator attached, thus creating the .rock file you need.
