Again, just drag and drop music onto the player.  

Alternately, you can use iTunes to put music onto your player and then use the Tag Cache to browse that music.  This is described in detail in the Rockbox Manual.  See the link in my signature.

Also, isn't video not supported in Rockbox yet?
