Depends on your car stereo honestly.

If you're plugging it into a line in, then you should be at 0dB. If it's a tape adapter or FM transmitter, it's really trial and error. I personally use -25 with a tape adapter in mine.

I have an Auxiliary input on the head unit... Is that the same thing as a line in (yes, I'm an idiot)?

...though if you're going through the dock connector, you don't have any control over the volume coming from the iPod.

Is there a way to have Rockbox "cap" its volume at 0db so it doesn't amplify (and I'm guessing possibly distort/clip) above that? Or failing that, to simply lock the volume at one setting so it doesn't get moved around when I skip to the next song, pause, etc?

You can use the pre-cut in the EQ to cut the volume by 6dB.

Are you asking for a method to cap the volume so that one track is not louder than the next/previous?

If so, you want to apply ReplayGain tags (might I suggest Foobar 0.8.3?) and enable the ReplayGain option in RockBox.  EQ pre-cut will limit the maximum volume your ipod will ever accheive, but will not do anything about the differing volume between tracks.

But maybe I missunderstand.

Nah, I know about replaygain, this was more accidentally bumping the volume when I press one of the controls. It's easier to get it to 0dB when 0dB means "just turn it up all the way" as opposed to "up all the way then a few back down".  Febs's answer was exactly what I was looking for.
