iPod 6th Gen drive gone mad after deleting a photo folder in Rockbox.

I have decided to update it with an iFlash SD (maybe 4x MicroSD) adapter kit (I dunno what to call it), and to order a front and back case too. Any reccomendations for the new storage options?

I'm aware of the 128 GB limit on iPodOS for the 6.5 gen... does Rockbox read bigger SSDs/MicroSD cards?

More-or-less, yes.  That is, you can get round the 128gb limit by using Rockbox, but then you can never boot into the original firmware mode (i.e. booting holding menu button down or with hold switch on).  If you do it does unpredictable things, I think it can  mess everything up needing a complete restore.  Probably best to somehow disable dual-boot entirely so not to do it by accident (not sure how that is done, but there is a way, I gather).

Also you then have to do all file syncing in RB mode, which I think still isn't 100% reliable.  Though I hear it works better than it used to.

Or you could just get a new hard-drive.  Pity the 240Gb drives don't seem to be around any more.
