Rockbox Utility won't detect my iPod in the right mount point

Unfortunately, I am unable to format the iPod to FAT32.
I can only choose exFAT or NTFS for it.

chris_s:
You could use iTunes to restore it to FAT32.

bunnyDrop:
I just installed iTunes but it isn't detecting the iPod even though I plugged it in.

Well, you can format to FAT32, just not with the tools Windows ships. Simply using something Windows offers won't do the trick, the Apple firmware also won't work if the Ipod is formatted to exFAT -- despite the name exFAT and FAT32 are completely different filesystems. The fact that your Ipod is currently exFAT might be the reason why Itunes isn't detecting the Ipod (though I never tried this so this is just a guess.)

There are a couple of tools around that allow you to do the formatting. If you have access to a Linux machine the easiest is probably using its mkfs.vfat -F32. On Windows you need a 3rd party tool. A quick Google search f.e. finds this: https://www.howtogeek.com/316977/how-to-format-usb-drives-larger-than-32gb-with-fat32-on-windows/

Is that the case even if you put it into DFU mode (hold down centre-button and menu button)?

For formatting in FAT32 I tend to use AOMEII (which is free, I think).
