I think you can save ratings with the export/import modifications options in the database settings. I have never tried it though.

Well, that solved my problem, thanks for the suggestion! I copy/pasted the database files with my ratings, exported modifications, initialized the database, imported modifications, and after updating and restarting the iPod a few times, the database remains untouched!
