iPod Video + ZIF-CF + CF-SD adapter + SD adapter + mSD issues

So this adapter chain I used to replace a standard 80 GB HDD in iPod Video 80GB. I recovered iPod via iTunes without any issues, installed latest stable Rockbox without any issues too. Issues are coming when I transfer gigabytes of mp3 files there via USB multimedia mode. On Linux transfer just stops and I get information file can't be copied and after that it behaves like it's mounted as read-only, on Windows I can copy files but every around 30 seconds transfer freezes for let say 20 seconds. It also happens that windows transfer stops with error, iPod drive is unavailable in Windows and ipod is just hanging..

So, I wonder what is going on.. Maybe this Chinese CF-SD adapter is crap? Any ideas how can I troubleshoot this? Maybe there are some parameters I could apply while mounting the drive to not "flood" storage while copying?
