Unbearably unstable on iPod G5. What am I doing wrong?

Hello, I've tried to install RockBox on my iPod Video 5G, but it seems unreasonably unstable. I've tried both the last stable and dev build.
The iPod's hardware is completely stock, without modifications.
It reboots often when I try to change theme, font, or color, it freezes half of the time when I insert the USB cable, and it freezes/eject itself during data transfert. It even freezes when I try to turn it off. I don't think it is a drive problem: before trying RockBox today, it was on stock Apple firmware completely filled with alac files.
What should I try doing to have an usable build?

If simple things like changing settings are rebooting that is probably a hardware problem. If the apple firmware still works then use that.

I checked the disk, and it seems fine. Only changing theme related settings crashes the system. All other settings work fine. Also, playback seems fine. The main problem is data transfer.
I've only tried installing the firmware with OS X 10.12 and Windows 10. Maybe it has something to do with this? Does the RockBox installer have some kind of checksum to verify installs?

The bootloader checks the binary on start up, so your actual executable is fine. Theme crashes could just be that you have a bad theme or something like that. You said before changing fonts causes crashes, which wounds worse. You can just copy a new build over if you're concerned about the one you have.

Well, I've tried to manually install v3.13 and v3.7, with the same exact results. I guess it's a hardware problem then. I wonder what component can cause this, since is not the HDD…
