Hello again, so that didn't work.
The bootloader was the issue, I installed emcore (almost super easy). In windows I couldn't get udf mode recognised, but the umsboot installed anyway. It then wouldn't appear as a disk, so I un-plugged without ejecting or rebooting, and stuck it into my linux box, I was then able to copy the .ubi and boot to the fallback rockbox, Ubuntu now wouldnt recognise it, so I ejected and stuck it back into windows to use the aforementiod beta utility. This installed rockbox. Finally...
But now, I cannot get it to mount on Linux to try to copy music to it. usb keypad mode comes up, and it shows in disk manager, but I dont know how to mount it......
Any ideas?

USB is massively more stable in the current build, so if you installed an old one with emcore, then that might explain why you can't use USB.
However, I think it is pretty common for those iflash adapters to not mount, or to mount and then just corrupt the storage in rockbox. If you install the bootloader I linked above instead of emcore, you could use the Apple firmware to copy files over and see if that works any better. Some people report that if they copy files over in the Apple firmware, they can at least play them in rockbox with those adapters.
