Hi, I'm not 100% sure if this is the right forum, but I see many other posts raising similar issues, so there you go.
Yesterday I followed step by step the instructions on FreeMyIpod.org for installing EmCORE and Rockbox on my brand new (I just opened the box yesterday) iPod 160GB 7g, installing -- i believe -- all the most recent files. I had a little hiccup, but the installation went fine, and I moved my entire music library (about 120GB) in a folder I created at the iPod root directory. I had to create and the "committ" the database, it took a while but it worked. So far, so good. I can play it all, i managed to install a theme i liked and all that.
Now, after a few hours of use I remembered that there were a few other files (lectures, audiobooks) I wanted to move on iPod. I connected it to my PC (Win 8.1.), it takes about 30 seconds but eventually it shows up, i can open and browse the contents of the iPod [EDIT: actually I forgot to mention: Windows always gives the "There's a problem with this drive, scan now to fix it" error message. I just ignore it]. The problem is: whenever I try to move a large file (say anything above a couple of MB) the "Copying" dialogue box pops out, starts moving the files for a couple of seconds, then I see the transfer speed go down, until zero, and it just remains stuck there. If I try to cancel the transfer, it won't let me, and will just freeze the dialogue box. I have to unplug and reset (select+menu) the iPod to be able to reboot Rockbox.
I've read somewhere that I should try and launch Rockbox's "fallback image" in cases like this. Well, that doesn't work either. Even WHEN I manage to run the fallback image (pretty often the iPod just freezes when building up the database) the very same freezing when moving files happens.
Moreover, often when I try to go back to my "normal" Rockbox after having failed the file transfer on fallback image, the Ipod freezes on the "committing database" phase. Right now for example I'm not even managing to access anything because it's stuck at step 1/9.
Is this all normal? Is it just rather unstable and I have to live with it? It seems to me that many other users manage to have a pretty smooth experience... And yet what have I done wrong? The iPod is brand new, I use an original cable, I followed the instructions carefully... I'm really considering going back to the Apple firmware if this is gonna happen every time I want to add one file to my iPod...
Any help would be very very appreciated.

FYI, yesterday [Saint], kindly helped to fix the problem. We had no luck, as my iPod was behaving oddly. Today I restored the Apple firmware, but even so the iPod seems faulty (opening the diagnostics tool, it says it has over 2000 "Reallocs" -- which I've been told it's bad news), plus as I add music via Mediamonkey it gets stuck, or says it has moved it but the iPod says "No Music", and other stuff like this pointing to an HDD failure.
How this happened, I have no idea, since I opened the new box just 2 days ago. I will now try and see if Apple or the seller can replace it, even though since it's been discontinued I'm not sure it will be an option.
I'd like to ask one thing ([Saint], if you read this perhaps you can answer?): is it absolutely certain that in no way I have caused this myself by installing EnCORE and Rockboxing it? I just want to know in case I do get a replacement: I wouldn't want to try again and fuck up another iPod.

This is, functionally, no different from just using the device as intended.
In the larger scheme of things, all you did, was read and write to a disk. And, that's what disks are for.
On a side note, something that any service technician should tell you if they are honest, is that these disks are terrible. I mean, awful. Shocking.
Now, I've never heard of one killing itself quite this quickly, but sooner or later, they almost all go the same way. They essentially commit suicide.
PS: If you're wondering, or worried, no - they won't be able to tell what you did. Moral implications of this aside, I'll leave the knowledge with you.

Using PMs to annoy devs about bugs/patches is not a good way to have the issue looked at.

Well, I suppose that I'll get my replacement unit, and if it happens again I'll just buy a new compatible disk (maybe even a 240gb one). I've seen several Toshiba ones on eBay, at very affordable prices.

You could consider using a mSATA drive:
Upside no moving parts
Downside it consumes more energy
(I haven't installed such a drive myself yet but that's what I get from
this
