Installing Rock Box on Sansa Clip Zip with 01.01.21A won't work

Ok, lets be 100% clear here. You take a different version of the sandisk firmware than you currently have installed and copy it to the player. Do you see the firmware update screen? After rebooting, what version is installed?

Same as before.
It seems the step I'm missing is copying the firmware to the player. Yet when I look at the disk via terminal there's a .rockbox folder on the player and the .cpzpa (or whatever it's called) as well.

Tried copying the .zip and the .bin files to the player then selecting them on install using rb utility.
Install fails because it can open the files.

I don't understand what this reply is meant to mean.

I can select it when using the rb utility or I can unzip it and copy it to the player, I've tried the .zip and the .bin. From my mac or from the player itself.
If the .zip or .bin are on the player the installer fails, saying it can't open the files. If it's on my mac, as you've seen, everything seems to work, yet then disconnecting the player and unpluging it results in the original firmware being loaded.
