customize bootloader?

I have an IPod nano, and I know you cant remove the Apple crapola, but is there a way to modify the firmware so no matter what position you have the lock in, it just boots to rockbox

I'm not sure what happens if you try to boot with the hold switch set without the apple firmware installed.  It may just error out and force you to reboot.

You could edit the bootloader and compile your own.  The check for the hold switch is simple enough to remove, and the bootloaders are very short (see /bootloaders/ in the source).  Thats a little involved though.

There shouldn't be any need to recompile for this. And, to some extent, yes, it is possible to remove the "crapola" you speak of.

You'll want to look at: Advanced Rockbox install methods with ipodpatcher (specifically option 4).
