Maybe a stupid question, but:

If I checkout rockbox from Git, do I get the latest release build or the latest dev build? And if it's the release build, how do I grab the dev build?

To be exact: you don't get a build at all. You get the source, and from that you can create a build. Which will by default be the current development version (as gevaerts already said).

You need to build the cross compiler and then follow the instructions at http://www.rockbox.org/wiki/HowToCompile to actually make a build of Rockbox. Alternately you can build the daily builds from http://build.rockbox.org/.
