Need suggestions on how to customize for techno noobs

Hello.  My name is Josh.  I've been playing with Rockbox for a while now, and I have given a rockboxed H10 to one of my friends.  The problem is that my friend is an older gentlemen who has never owned an mp3 player before.  He is amateur at technology at best.  I would like to customize the menus to remove the advanced settings and menu items that he will never use, preferably with a theme that can easily be switched, and do other things like enlarge the text, adjust the high sounds to be louder etc... 
The questions are as follow:
How much of this can I do as a theme?
Where do I start?
Any other ideas for customization?

Wow. Thank you for the quick reply. I'm working through the manual now.  I didn't find a theme that would fit my needs well enough.

If you find a theme that almost fits your needs, adapting it is mostly not that hard.

The great thing about Rockbox is, that you can save different settings (like the appearance, sound settings, etc.) using single config files and load them as you want using the shortcuts menu.
