Can someone point me to the articles of how to increase the  Ram from the basic 2MB? I used to see these a few months ago but not any more.
Since I am changing my harddrive from the 20GB to 80GB,  I thought ...while inside I may as well try to change my batteries and possibly increase the RAM - if its doable.

Also have people been seeing benefits of chosing harddrives with 5400RPM over 4200RPM? What about 7200RPM?
Does the Harddrive Cache of 16MB, 8MB behave better than the old 2MB?

For the pages describing the 8Mbyte modifications, I can certainly recommend the "documentation" page on the Rockbox site. There are two links to pages describing the 8MB mod.

You should definitely choose the slowest hard drive possible, to save batteries. Rockbox can't make use of the increased speed from the faster rotation anyway. Also, the hard drive cache have very little effect, if any.
