A lot of people are looking for this kind of functionality...
What kind of problem are you trying to solve?
Plugins are loaded on demand. They don't consume any resources except the disk space required to store them. If you don't want to use a plugin just don't use it -- why should "a lot of people" be "looking" for this? A typical Rockbox installation is only a couple of megabytes, so with the disk sizes of current players there isn't much difference when deleting parts. And nobody requires you to run a plugin you don't want to use. It's like Windows coming with Wordpad -- if you don't want to use it don't use it.
The problem is not resources, the problem is that the functionality is available and at hand. "These people" don't wan't to have ACCESS to video functionality or games (e.g.: someone who does not want to spend/waste time on watching movies or playing games, does not wan't the temptation at hand and accessible at all times, such as a serious student; e.g.2.: someone studying in a school or a religious seminar where they do not allow video capable devices for fear of students watching inappropriate content or/and wasting time).
Thus, someone who is not tech-savvy (or does not even know how to restore an iPod with iTunes, better yet does not have access to a computer with iTunes/computer) wan't to listen to music or classes, but requires a large amount of space. The iPod Classic is a perfect candidate (a lot of people already own one and wan't to get rid of this "functionality" mentioned above).
So, you restore their iPod to a firmware with this criteria - Rockbox seems to fit the bill.
