knob:
I had this problem at first. I just re-embedded by Album art using mp3tag and I have had no problem with rockbox and album art ever since!

Thanks for the suggestion Knob!  I have MP3 Tag (the same program you suggested) but I can't figure out how to use it to do what I want.  The only option I see on there is to find a tag source for cover art (an internet option it looks like).  Is that really the only way?  Is there no way to embed the album art from the corresponding album art files in the same folder?

The reason I want to do that instead of the internet option is two reasons: 1) many of the albums I own and listen to regularly aren't really easily found on sites like Amazon (a lot of underground and independent stuff), but I've already gathered their album art in their folders on my computer, and tried tagging them with Media Monkey.  2) even for the ones that are found on Amazon, I'm actually living in Madagascar where my internet bandwidth is both slow and capped.  So, since I've got about 15000 songs, I'd prefer not to search the internet for all their album art again.

Please let me know if you can give any more help about how to use MP3Tag (without the internet), or another method!  Thanks!

yapper:
In mp3tag you should be able to right-click the album art icon (lower left) and choose Add Cover. You can then browse to find your local jpg file.

knob:
I add all my cover art manually.  I found I had to remove and then re-add the same album art sometimes to make it work.

No need to re-download again at all, just re-add it, and mp3tag is all you should need, just right click on the album art icon as yapper described. Hope this helps.

madagascaradam:
Hey guys, thanks for all the help!  Actually, before I could check the responses, I tried out a new thing (basically, the same thing as your responses) yesterday with a function in the AlbumArtTagger in MediaMonkey.  (Then I moved houses today, so I didn't reply sooner.)  The reason I've been enjoying MediaMonkey and wanting to focus on it is the batch functions I can do with it... since I have such a large music library, I didn't want to have to do EVERY album one at a time.

First, I saw that many of the albums with album art that weren't working had multiple pieces of album art embedded (I could see that easily in MP3Tag), and many of the albums that worked fine only had one piece of album art embedded.  So, I had MediaMonkey do a batch REMOVE all artwork on all my songs.  Then I had it do a batch re-add album artwork (from the album mask to the embedded tag), so that each song has only one piece of embedded artwork and it's definitely a .jpg, and now it works!  Well, it works for about 95% of it anyway, which is WAAYY better than before.  With the few I've found that don't display artwork, I'll probably do what knob said though and manually remove and re-add.  The process of doing the "batch" on MediaMonkey took a good 5-6 hours for my whole music library, which I'm sure is way better than doing it manually, but still not something I want to do again.
