Change Font Color

Greetings,
I apologize if the answer to this is blindingly simple - also if it's been asked & answered before, but a quick search didn't turn anything up.
I'm looking to learn if I can change the color of the text in the menus/display. I'm intimidated by trying to make my own theme, so I'm hoping it's not necessary. There are some themes I really like but the text color of most themes are grey and hard to read on my small iPod Nano (2nd gen) screen, so I'd like to change it to white.
I can change the color of the text for the line that's currently highlighted but for the life of me I cannot find somewhere where I just change the color of the text itself. "Foreground" was my next bet, no dice.
Anything would be appreciated. Thanks in advance.

settings > theme settings > colours > foreground colour...
that wont - may not - work if you are using a theme with a sbs though

I've tried that and it doesn't work for me - but thank you anyway.
It doesn't work with any of the themes I've tried tweaking, so they must all use .sbs skins. I will live with it as is. I found the theme that looks similar to the original iPod system (white background / black text) so it's very readable, if not the nicest looking.
