I just downloaded the most recent version of Rockbox but now that I have installed it, I cannot hold menu and get the hide/show files option... anyone know what's wrong?

You mean the quickscreen option? That's not there anymore by default, but you can put it back. See the manual (http://download.rockbox.org/daily/manual/rockbox-ipodvideo/rockbox-buildch5.html#x8-1020005.13) for details on how to change which settings to have on the quickscreen.
