[SOLVED] iPod Classic (120GB) Not Recognized When Connected

My best suggestion at this point is to head to #freemyipod-support on Freenode and talk to the lead developer of both emCORE and the Rockbox iPod Classic port, Michael Sparmann (known as [7] or TheSeven on IRC).
Be prepared to wait, possibly for some time, after joining and asking your question. Different time zones can make it difficult to catch up with a particular person.
If anyone is in a position to help you debug your problems, it is this man.
If you don't have an IRC client running on your PC, qwebirc offers a nice Freenode webclient which is available here, just open the linked page and enter a nickname, the desired channel (#freemyipod-support) and fill in the captcha to it knows you're human and press connect.
Then ask your question(s) whilst making sure to highlight Michael by using his nick at least once ([7] or TheSeven) in a post and when he can, if he can, he will get around to helping you.
Its possible there may be others present that can offer support in the channel also.
EDIT: It is worth mentioning, that this is a known issue. Perhaps you did not read the release notes & known issues on the emCORE Releases page you were linked to during installation?
Specifically:

Replacing the .zip and .ubi files with these:
http://files.freemyipod.org/tmp/installer-ipodclassic-usbfixcandidate.ubi
http://files.freemyipod.org/tmp/rockbox-ipodclassic-usbfixcandidate.zip
will eliminate the problem.
