I doubt many people (or any people?) use an IDE to work on Rockbox.

Hm ok, I have always used an IDE, from day one, this is just the way I was taught.
So what do people use? Notepad? How to accommodate for typos, syntax highlighting and so forth?

Use a good text editor. Most advanced editors have helpful features for programming. It is not really possible to recommend a special since it has to fit your needs -- and those vary between people. I guess the most widely used editors are vim and emacs. Notepad is ... well, nothing I would call an editor.
