Specifically, the 160GB Classic uses a CE-ATA interface for the hard drive. Until someone figures out how it works, that model is out of the loop.

Can't code be reused from ports that use a MMC card (ex: Archos Ondio). I'm new to this and just trying to help speed the porting process. (my iPod has been waiting for Rockbox for a long time and finding out that mine is the only incompatible classic caused my soul to shatter into a million flying pieces :'( )

Assuming they use the same CE-ATA interface, yes. However, since the archos device is almost a decade old, its unlikely to be the same as shipping in modern devices.

CE-ATA is a standard, but every implementation of it is a unique physical piece of hardware that requires its own software to use.
