How to start off with fresh (no-media) iPod after getting second-hand iPod?

We received a second-hand iPod that comes with songs. What should we do now to make it as "fresh out of the box" as possible? We plan on using Rockbox as our only operating system on the iPod.

 Is it just a matter of formatting the iPod? If so, which format type? We're using Ubuntu Linux and plan on managing media on just a Ubuntu. So should we choose ext2 or ext4?

Or do I just go to our file browser and delete all the files and folders off the iPod?

DO NOT FORMAT IT EXT2 or EXT4. 

Rockbox only supports FAT32.

Delete the hidden "ipod control" folder to remove all music.
