Not sure if this has been discussed before or if its an existing feature of Rockbox...

but it would be great if we could increase the size of the font/text as this would make it easier to read.

Take a look at the manual under Theme Settings, specifically the Font section:

Select a bigger font.  Make sure to install the font pack first, and you'll probably want to change to a theme designed for the bigger font.  See the theme site.

MItaly:
You may also want to try the antialiased-fonts patch, the converted truetype fonts, at relatively-high sizes, are usually much nicer and easier to read than the normal bitmap fonts.
