I am very minimalistic, so for me the huge cluster of menus with Rockbox is sometimes unpleasing to the eye, and especially annoying when I really only need a tenth of the menu options available but have to search through them all. Before wasting all of the time setting up VMware or whatever and trying to do this: would it be possible to rearrange the menu items, rename them, possibly remove a few that I never use anyway? I don't plan on changing the way anything works, just the visual interface/organization.

PS: I just updated Rockbox after a good 9 months, and I use to have an indent of several pixels before menu items, this has disappeared. Anybody know how to reinstate it? :p

I've seen the indent mentioned before, I forget what you do to get it back.

Yes, you can change those.  Download the source and comment out the menus you don't want.
