On the main menu it has all cap words like PHOTO and MUSIC. I have a better looking set of titles. How do I delete all the words I do not want to show up on the menus?

Those are files on your MP3 player. You can delete them on your computer, or in rockbox by browsing to them and holding select, then choosing delete.

I have deleted the folders that say Photo but once I shut of my system and then turn it back on they are there again.

Did you boot into the original firmware? If they're created by the OF on your target (sansa I think?) then it'll probably recreate them if you reload it.

Is there a way to delete them permanently. Or does the original firmware from sandisk need it to run? because I cannot seem to get ride of then period.

I think they'll come back whenever you reload the Sandisk firmware. So either accept them or stop loading the sandisk firmware.

You could try setting the Folders atrib to Hidden and setting Rockbox to View Supporter, and then maybe you just won't see them.
