Creating a playlist 1 song at a time

Is there any way to create a custom playlist 1 song at a time instead of whole folders? I can't seem to figure it out.

Yes.  Navigate to the song you want, enter the context menu, and select Playlist.

You don't say what player you have, so check the manual for your player to determine how to enter the context menu.
