question about recording with an 'ipod line-in adapter'

The iPod Video (as called by Rockbox) is called the "iPod Fifth Generation" by Apple, not the "iPod Classic" (which we call either the Classic or Sixth Generation).

The first player from Apple to come naturally at 120GB was the Classic, not the Video, and doesn't have Rockbox on it yet.

Well, Apple's naming actually sucks a big one there...
It was released as the iPod Video 5~5.5th Gen, but it's a "classic iPod" under Apple's new naming scheme.
Any iPod that's not a Touch, Shuffle or Nano is a "classic iPod" now.
Hence the confusion when Rockbox doesn't support the 6th Gen released as "iPod Classic".
It's all a bloody confusing mess.

That's the thing: the idea that they're "named" classic is a myth (more or less perpetuated by a wikipedia editor or two who thinks that because Steve Jobs called them classic in a speech that's their designation).
They aren't named classic, he just called them classic (in the sense of a classic work of art) whereas Apple has officially named the sixth generation (and later) HD based iPods the "iPod Classic."
Apple makes it pretty clear where 5th generation ends and Classic begins on the page I linked, and doesn't call anything older than 6th generation by the term "classic" either as an adjective or proper noun at all on that page.
Since it's Apples' own page defining the generations, it's more or less the most definitive source you can get on the matter.
