my dvd player sends the track information for whichever cd I'm playing to the screen I have in my car but my video iPod does not. It sends pictures and movies obviously but not track information for songs. If I download and run rockbox when I am playing regular mp3's, does it send some sort of visualization out to the TV?

Rockbox doesn't do TV out at all.
