You don't have to uninstall Rockbox to get back to the Apple firmware - Rockbox has a dual boot feature.  Yes, the Apple firmware allows you to use MP4 and has video-out, but you'll need to ask somewhere else for help with that.

I assume by "normal mode" you mean the Apple firmware.  Rockbox is not a "mode", it is a complete replacement for the original firmware.

As I said, you need to go somewhere else to ask about the Apple firmware.
