Yes, compiling is pretty straightforward - see www.rockbox.org/wiki/SimpleGuideToCompiling.

You would also have to add the define

#define HAVE_LBA48

for big disk support.

Note that this is all assuming there are no hardware restrictions, e.g. for USB like on the Archos:

Ok cool, thanks a lot for the help. Is a lot easier than I thought it would be, assuming it's all compatible anyway :)

My brother has rockboxed his Ipod Vidjo anyway so I could test it on that, presuming it wont mess anything up on him if it doesn't work and has to be switched back to the 80GB HD.

I'll come back once the 240GB is available to wreck your head more anyway  :P
