I have no idea how to set up album art...

"draw" us a sample of your directory structure so that we can help you.
an example of mine would be:
/Music
/1000 Homo DJs - 1990 - Supernaut
/cover.100x100.bmp
/01 - Supernaut.mp3
/02 - Hey Asshole.mp3
and on and on
/Add N To (X) - 1999 - Avant Hard
/cover.100x100.bmp
/01 - Barry 7's Contraption.mp3
/02 - Robot New York.mp3
and on and on
Since you can see I organize my music with one album per folder, I have a "cover.100x100.bmp" in each folder, corresponding to the appropriate album cover.
Your organization might be different and need a different naming scheme. Let's see how you do it.

OK, but when I plug in my player and "Removable Disk (F:)" appears, which is where I put my music in, I see the ".rockbox" folder, then other folders under it, and then all my music. Should I organize my music in folders inside the ".rockbox" folder, or keep it where it is?

The organization is up to you. So far it has been unclear how your files were organized. Now it seems that all of your music is in the root directory of your player. You can save your cover art as filename.bmp or albumtitle.bmp and also keep them in the root of your player. Alternatively, you may create a directory called albumart inside of the .rockbox directory and name your album covers artist-albumtitle.bmp. These options correspond to options 1,2 and 4, respectively, from the AlbumArt page.

When I go to Pictureflow, it says "No albums found. Please enable data base. Plugin Error"...

Can you tell me what is unclear about that? I can phrase things a different way, but if I don't know what is confusing you then it's a bit of a stab in the dark.
