I haven't seen anywhere yet (more likely because I'm blind): What's the ideal process of uninstalling previous daily builds and installing the current.

My computer didn't make friends with the RB Utility yet, so I've only done direct file moving.  Should I just unzip the current into my player and have it replace everything, or would that make me lose things that I wouldn't want to?

That will work just fine. Make sure you extract the zip file to the root of your player.
