Lots of Rockbox's files are toast, so you'll need to unzip a new build to the iPod.

A "restore" in iTunes _will_ fix it (and format your iPod's HDD), but I'm not sure if that's needed or there's an easier way to only fix what's required.Perhaps just running sudo fsck.vfat /dev/sdc2 and choosing one of the options it presents (I don't think it really matters which unless you know what you're doing), and then unzipping a Rockbox build will get you going again.
Since only Rockbox files are corrupted, I'm thinking you didn't "safely remove" (or umount/eject in Linux) the iPod when you disconnected it after the install. Always make sure you "safely remove" devices.
