Loopback filesystems in a file on vfat.

I really don't get your point. Your player isn't a data vault, and this makes all data on it insecure. The same applies for almost all portable storage media like usb sticks, floppy discs etc. If you care for data security then you need to use an encrypted file system. Doing so as main filesystem is out of question for a dap due to several reasons, and media files are usually no sensitive data. If they are then you must not carry them around with you. And if you want to have a secured filesystem on the player you can still create a new partition -- the loopback filesystem file would occupy the space anyway. Btw, the apple firmware somewhat works this way: the system files are stored in a special partition.
If you are talking about data integrity, then FAT is a non-complex yet working file system. It was used as main filesystem until Windows NT / 2000 was released, and all the windows folks usually had much more trouble with other stuff than with the file system. Besides, the player usually only reads the file system which is a safe thing -- regardless of the file system.
