Follow the instructions in the manual for putting the iPod in disk mode and installing a Rockbox build.  Or, put the iPod in disk mode and then use the Rockbox Utility to install the current build.

Are you trying to get your original folder back? If so, plug it in as a USB drive, and try this: http://www.download.com/DataRecovery/3000-2094_4-10702323.html?tag=lst-1

First off, try turning on hold when you reboot it to load the OF. See http://download.rockbox.org/manual/rockbox-ipodvideo/rockbox-buildch3.html#x5-290003.1.3

Reboot your iPod by holding Menu+Select and then put the iPod into disk mode (as Febs stated) by holding Select+Play right as soon as the Apple logo shows after you rebooted it. This will put it into disk mode so that you can connect it to your computer.

Once connected, re-install rockbox.
