all i want to be able to do is reboot my ipod video to apple firmware without uninstalling rockbox

thats all i want

but a simple answer is a heaps amount of help

Section  3.1.3 of the manual should treat you just fine.
You should look at it, unlike many open-source projects, Rockbox has a kick-ass manual.
