Current Rockbox builds do not have their own Universal Mass Storage (UMS) mode on iPods, so you need to use the Apple firmware for transferring files, until the UMS work is complete.
I think you're overreacting about removing Rockbox, all that was wrong was that your iPod wasn't turned on. This is apparently due to a bug in the Apple bootloader, and as you saw, you can turn it on by doing a hard reboot (menu+select).

Really. I'm not sure what you mean by somewhere to start. Your player got stuck before any Rockbox code was loaded and you had to do a hard reset in order to get it back to a known state. The hard reset function is hardware driven, so barring hardware failure you should always be able to reset it in that way.
Info on dual-booting and uninstallation can both be found in the manual. Though, honestly I see no reason to remove Rockbox just because your unit locked up once. If you peruse Apple's forums you'll see that plenty of iPod users have experienced this sort of behavior without Rockbox.
