Possible to edit the graphics in some games?

My question is: Is it possible for me to edit or change the graphics in any of the games?
I have an Iriver H10 5gb and some of the games such as Jackpot or xobox i find do not completely show off the class and style of this beast.
I simply want to be able to change for example the different scrolling images shown in the jackpot plugin to some images of my own of the same dimensions.  
If doing this requires any coding I don't actually know any but if its not to hard I'm willing to give it a go.
What do you think?

You still have to set up a development environment and change the images and build your own copy of rockbox. See http://www.rockbox.org/twiki/bin/view/Main/DevelopmentGuide
