Yes.  Follow the instructions on the wiki to downgrade to the earlier version of the original firmware.  I believe it is 01.01.01p but don't quote me.  Once you've done that, you'll be able to choose MSC mode in the original firmware. Then, follow the regular installation instructions.

For completeness and since a downgrade is a bit risky, I want to state the other two options too.

Sandisk did not remove the mode itself just the setting in the menu so it is still possible to get to it by - either using Linux (which doesn't care about the MTP mode) - or using a special key sequence, as described by Llorean in IRC (http://www.rockbox.org/irc/log-20071215#10:21:59, discussion starts at 10:03, maybe read a bit further than what I linked to, to read about possible disadvantages).

The firmware downgrade Febs mentioned is explained on the SansaC200Port wiki page, it might save you trouble later but should be done very carefully.

Thanks guys. For now I traded my c240 for my Dad's e260 which I can load Rockbox on but if I end up with the other player again I'll look into downgrading.

I added the key sequence to the wiki when I heard about it, for future reference.  :)
