The way it is now you can use two fonts - the system default font and the user defined one.

Yessir.  Setting a viewport is like defining a new screen within the screen that the old tags can be used in.

Just two fonts, the default rockbox one (tiny) and the theme font? Or can you set up more fonts in the WPS screen?

Currently just those two - but the plan is to allow multiple user defined fonts eventually.
